Summer Sparkling Ale Number 2
This recipe has now occupied pride of place as my favorite one to brew. This recipe is just bursting with flavour and is a great drop on a hot summer day or inside on a cold winters day. The basic recipe is the same as for the Summer Sparkling ale but with half a can of wheat beer malt extract added. The wheat beer just gives it a greater depth of flavour and everything works together brilliantly. The taste is not that dissimilar to Mountain Goat Ale.
Ingredients
1 Can Thomas Coopers Sparkling Ale
1Kg brew enhancer.
750gm of Wheat Malt Extract (comes in 1.5Kg Cans)
12gm Hellertau finishing hops
Saf S-23 lager yeast.
Method:
Simply steep the hellertau for at least 10 minutes although I recommend 15 to 20 for this brew. Also re-hydrate the yeast (discard the one that comes with the Sparkling Ale kit).
Soften both the extract cans in hot water (by standing in a pot and pour boiling water around them and leave for at least 10 minutes).
Mix it all together in the fermenter with 2 litres of boiling water and top up to 23litres with cold water. If you have a large fermenter, you can get away with adding another 2 litres of water (25l in total) as there is a lot of flavour in this beer.
Pitch the re-hydrated yeast and close up the fermenter with the air-lock installed.
Should be ready to bottle or rack in about 4 days.
Notes:
This brew needs a good 1 1/2 to 2 months to mature in the bottle or keg to be at its best. The extra malt extract means there is also a lot of sugar to convert so allow plenty of time in the keg (I give it 7 days). I haven't calculated it as yet but I'd expect alcohol content to be up around 5.5%.
