Brew Booster, Ultra Brew
I've been asked a few times, 'what is brew booster?' or 'what is ultra brew?'
Brew boosters are used in place of the 1Kg of dextrose you normally add to a brew mix.
Generally brew booster is a blend of different types of sugars and often some light malt. A basic brew booster or brew enhancer can be bought from Coles and is made by Coopers. They have brew enhancer 1 and brew enhancer 2. Each has different levels of light malt added to the dextrose. Brew enhancer 2 may also have some corn sugar in it but I can't confirm that. The addition of light malt adds to the taste, mouth feel and head retention. Generally speaking, addition of some light malt will improve almost any brew.
Home brew shops often make their own versions of brew booster. They often combine several different types of sugars.
For example, the 1Kg 'ultra brew' brew booster I use most often is made up of:
- 250g dextrose
- 250g corn syrup sugar
- 500g light malt
A word of warning when using brew boosters or adding light malt. Mix the dry ingredients around before you put it into the vat as it helps get the malt dissolved. If you lump all the dry malt together it gets into big lumps when you add the hot water. it will still dissolve eventually but it takes longer. If you end up with big lumps of light malt, tip it into a sanitized pot and bring it to the boil to help it dissolve.
